Moroccan Orange and Date Salad


Unusual and delicious, this refreshing salad from Morocco is the perfect ending to a spicy meal.

2 medium navel oranges, peeled, pith removed, and separated into segments
12 pitted dates, sliced
3 tablespoons blanched slivered almonds
3 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon sugar
1/2 teaspoon ground cinnamon
A few fresh mint leaves for garnish
 

Arrange orange segments in a single layer on a dinner plate or similar size serving dish. Sprinkle dates and almonds over oranges; cover with plastic wrap and chill.

Just before serving, mix juices and sugar in a small bowl until sugar dissolves. Spoon over salad and dust with cinnamon.

Garnish with mint leaves, if desired, and serve.

Makes 4 servings
